In our production process we do not use animal proteins or products of synthetic origin with the exception of the necessary sulfur; often lower than the parameters of the organic specification. Fattoria Le Masse bases its work on exclusively organic and biodynamic practices.

Organic Tuscan red wine made from 70% Sangiovese, 20% Canaiolo, Colorino and Malvasia grapes. 13.5% spontaneous fermentation wine carried out by indigenous yeasts in 15 hl and 20 hl vats, without temperature control.

Without temperature control, in steel vats and with indigenous yeasts. 2-week maceration on the skins, manual punching-down.

Wine with an alcohol content of 14%.

IGT white wine made from 75% Chardonnay and 25% Pinot grigio vines.
The must obtained from the soft pressing of Pinot Grigio is left overnight to decant in a steel vat. Once decanted, it is then used as a “pied de cuve” to which we add the Chardonnay must, which is also the result, at a later stage, of a soft pressing, a night of decanting and a subsequent racking that combines them.

Alcohol content of 12.5%.

Obtained from the soft pressing of whole Sangiovese grapes, harvested at the end of August to maintain acidity and freshness. Without temperature control, the must ferments with its indigenous yeasts in steel vat and in spring the wine is bottled.
